Đậu hũ non rửa sơ qua với nước, sau đó dùng dao hoặc muỗng nghiền nát đậu hũ.
Tôm rửa sạch, bóc vỏ, lấy phần chỉ lưng đi, sau đó thêm gừng vào rồi băm nhỏ.
Ngâm hạt kê với nước trong 2 giờ rồi vớt ra để ráo. Sau đó, thêm 1/4 muỗng cà phê muối vào.
Cho đậu hũ nghiền và tôm vào một chén, thêm 1/4 muỗng cà phê muối, 1/2 muỗng cà phê rượu, 1/2 muỗng cà phê tiêu, 1 muỗng cà phê dầu ăn vào trộn đều đều rồi để riêng trong 15 phút.
Lấy một phần hỗn hợp tôm đậu hũ đã được trộn đều lại với nhau, vo thành viên nhỏ vừa ăn. Tiếp theo thì lăn viên tôm qua hạt kê đã ngâm, áo đều viên bột. Làm tương tự đến hết phần tôm đậu hũ.
Chuẩn bị một nồi nước sôi, đặt đĩa tôm đậu hũ lên, hấp với lửa lớn trong 15 phút.
Cuối cùng chỉ việc lấy ra bài trí, nhìn món đậu hũ trộn tôm có màu vàng ươm thật đẹp mắt đấy.
